Cooking Instructions

1.Preheat oven to 350F (176C)

2.Wash and remove stems from eggplant

3.Cut lengthwise into 1/2 inch slices. Pour oil into frying pan up to 1/4 inch and heat over medium heat

4.Lightly fry eggplant until soft and gently browned

5.Layer the eggplant in the bottom of a baking dish
-
6.In a bowl combine the tomatoes, basil. Garlic, salt and pepper to taste, and spoon the mixture over the eggplan

7.Top with feta cheese, and bake for 45 minutes.

Olive oil for frying

1 pound ripe tomatoes, diced

5 tbsps fresh basil, chopped

5 cloves garlic, minced

Sea salt to taste

Ground black pepper to taste

1/2 pound feta cheese, crumbled
