Cooking Instructions

  • 1.Preheat oven to 350F (176C)⁣
  • 2.Wash and remove stems from eggplant⁣
  • 3.Cut lengthwise into 1/2 inch slices. Pour oil into frying pan up to 1/4 inch and heat over medium heat⁣
  • 4.Lightly fry eggplant until soft and gently browned⁣
  • 5.Layer the eggplant in the bottom of a baking dish⁣
  • 6.In a bowl combine the tomatoes, basil. Garlic, salt and pepper to taste, and spoon the mixture over the eggplan
  • 7.Top with feta cheese, and bake for 45 minutes.⁣

  • 2 pounds of eggplant⁣
  • Olive oil for frying
  • 1 pound ripe tomatoes, diced⁣
  • 5 tbsps fresh basil, chopped⁣
  • 5 cloves garlic, minced⁣
  • Sea salt to taste⁣
  • Ground black pepper to taste⁣
  • 1/2 pound feta cheese, crumbled⁣
